Wipe spills immediately on wood surfaces and keep clean with a slightly damp cloth. Be careful with containers and pottery dishes as some retain moisture on their base and can form a ring mark. Do not place hot pans directly on top. Re-oil twice a year (more if required), especially around the sink. Rule of thumb: if water stops beading on the surface, it needs to be re-oiled.
